The reasoning here is internally consistent for once. Seedless watermelon genuinely is a human-bred variety — it is produced by crossing plants to create a sterile triploid that cannot set seed. That is exactly what the hybrid criterion is meant to catch.
The practical problem
Seedless watermelon now dominates supermarket produce sections in most of the US and UK. If you are following the list strictly, you will usually need to seek out seeded watermelon at a market rather than assume the one in front of you qualifies.
The same distinction applies to grapes and raisins: seeded are approved, seedless are not.
One thing worth being straight about
None of this changes the pH of your blood. Your lungs and kidneys hold it between 7.35 and 7.45 whatever you eat — a reading outside that range is a medical emergency, not a dietary outcome. What food shifts is urine pH, which is your kidneys processing the acid load from your meal. That is the honest extent of what PRAL tells you.
