Is Honey Alkaline or Acidic? It's Genuinely Both

Short answer: honey is one of the most acidic foods you can measure — and it's alkaline-forming in the body. Both are true, and honey is the clearest illustration of why those two things are different questions. It is not on Dr. Sebi's approved list.

In the jar, honey is strongly acidic

The FDA puts honey at pH 3.70 to 4.20. For context, that's in the same territory as orange juice — well below the 4.6 line that separates high-acid from low-acid foods, which is part of why honey keeps almost indefinitely without spoiling.

Single-varietal honeys spread much wider than the FDA's range for typical blended honey: published values run from about 3.3 to 6.5, with lavender honey near 3.4 and chestnut honey as high as 5.4. That's a two-point spread — a genuine difference, not measurement noise.

The acidity comes mostly from gluconic acid, which bees produce enzymatically from glucose. It accounts for 70 to 90% of honey's organic acids, with citric, malic and oxalic making up the rest.

In the body, it's mildly alkaline-forming

Honey's PRAL is −0.3 — negative, so alkaline-forming. This is the most consistently reported figure in this whole set: every published table agrees on it.

Why only mildly? Because PRAL is driven by minerals and protein, and honey is almost pure sugar. There's very little of either in it, so there's very little for the calculation to work with. It lands just barely on the alkaline side.

Why the two numbers disagree — and which one matters

This is the thing worth taking away from this page, because it explains half the confusion in alkaline eating.

The pH of a food measures the food. It's a direct electrochemical reading of what's in the jar, and it tells you about taste, preservation and food safety.

PRAL estimates what the food leaves behind after you digest it — the acid or base load your kidneys have to handle, calculated from its protein, phosphorus, potassium, magnesium and calcium.

Stomach acid sits around pH 1.5 to 3.5, which is more acidic than almost any food. Whether something arrives at pH 3.9 or 6.9 makes very little difference by the time it's through. What persists is the mineral content — and that's what PRAL is tracking.

Honey is the cleanest example of the gap: strongly acidic in the jar, mildly alkaline-forming in the body. Brown rice is the mirror image — near-neutral in the bowl, strongly acid-forming after. Neither food is behaving strangely. They're just being measured two different ways.

Is honey Dr. Sebi approved?

No. Honey is excluded, and it appears by name on foods-to-avoid lists.

The reason is structural rather than specific: honey is an animal product — a bee product, not a plant food — and the guide prohibits animal products outright. Combined with Rule 1, that you eat only what's listed, and honey has no route onto the plate.

There are exactly two approved sweeteners: date sugar or date syrup, and pure agave syrup from cactus.

One honest caveat. Dr. Sebi's published materials give itemised reasoning for a number of excluded foods — broccoli, rice, shiitake, carrots — but no separate explanation for honey. It's excluded under the general animal-products rule, and that's all the record shows. If you see a page claiming a specific mucus-forming or hybrid rationale for honey, that's someone filling in a blank.

What to use instead

  • Date syrup or date sugar — closest to honey in viscosity and depth of flavour. The natural first swap.
  • Agave syrup — thinner and more neutral, better where you want sweetness without the caramel note.
  • Puréed dates or soft jelly coconut — whole-food sweetening, both approved, and better in baking than either syrup.

One thing worth being straight about

None of this moves your blood pH. Your body holds blood between 7.35 and 7.45 using your lungs and kidneys, and food doesn't change that — a reading outside that range is a medical emergency, not a dietary outcome. What does change is urine pH, which reflects your kidneys processing the load from your meal. PRAL predicts that well, and that's the honest extent of what it tells you.

Common questions

Can honey's acidity vary?

Considerably. Typical blended honey measures pH 3.7 to 4.2, but across single-varietal honeys the range runs from about 3.3 to 6.5 depending on the flowers.

Does honey's acidity affect cooking?

Yes. Honey's acidity reacts with baking soda, which is why recipes using honey often adjust the leavening. It also browns faster than sugar.

Is raw honey different from processed honey?

Raw honey retains more enzymes and pollen, but the pH and the PRAL are essentially the same. Neither version is on the approved list.

Is agave actually better than honey?

On this way of eating, agave is approved and honey isn't, which settles it within the framework. Nutritionally both are concentrated sugars and both are worth using sparingly.
